You could use any creamy spread if you or someone else doesn’t like Nutella. We would recommend that you use peanut butter spread or chocolate spread.

When it comes to the peanut butter that you use. It is up to you whether you use crunchy peanut butter or creamy peanut butter. Both give you the same flavor, but crunchy gives you a different texture to enjoy. Also for the garnish, you could also use chocolate chips for a special touch.

This recipe calls for baking powder, but you could always use baking soda if that is all you have on hand. Also, you can use any sugar you have in your cupboards. Although, brown sugar is better, as it gives your cake a sweeter and more caramelized flavor.

Finally, the recipe called for three 6-inch cast-iron skillets, but you may substitute a 10-inch cast-iron skillet in their place. You will thus need to cook your cake for an additional 20 minutes until a toothpick is inserted and comes away clean.

Ingredients Required

The following are the ingredients required to make this cake.

Cake Batter:

  • 2 eggs
  • 1/2 cup creamy peanut butter
  • 1/4 cup sour cream
  • 1/2 cup unsalted butter
  • 1-1/2 cup all-purpose flour
  • 1 cup white granulated sugar
  • 3/4 cup Nutella
  • 1/2 teaspoon of kosher salt
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of baking powder
  • 1/2 cup whole milk

Topping:

  • 1/2 cup roasted, coarsely chopped salted peanuts
  • 1/3 cup all-purpose flour
  • 2 tablespoons of unsalted butter
  • 1/4 cup light brown sugar
  • 1 tablespoon of peanut butter
  • Melted Dark Chocolate

Method

Step 1: Prepare

Set the oven to 350 degrees Fahrenheit. Use a 10″ skillet or 3 6-inch cast iron skillets coated with non-stick cooking spray.

Step 2: Prepare Topping

Brown sugar and flour should be mixed together in a large bowl. Then, using a mixer, whip together your peanut butter and butter together on a medium speed. Then gradually add the dry ingredients to the sugar mixture until the mixture looks crumbly. 

At this stage, you can stir in your peanuts and leave the mixture to one side. 

Step 3: Make Your Cake Batter

In this part, we use an electric stand mixer, but you could do this by hand. In the bowl of your electric mixer, combine your sugar, butter, and peanut butter together until it has become light and fluffy.

Then you can start adding your eggs in, one by one. Make sure that you beat the mixture well after each egg. After that, you can add your vanilla and sour cream. 

In a medium bowl, whisk flour, baking powder, and salt together. Carefully add your flour mixture to the creamed mixture, alternating between flour and milk. Although, you need to start and finish with your flour mixture.

Step 4: Assemble The Cake

Fill the skillet with half of the batter. Add a layer of Nutella on top of the batter. Then, add the remaining batter on top.

At this point, once all the batter has been added, you can sprinkle the topping over the batter.

Step 5: Bake

Bake for about 40 minutes for a 10-inch pan, or for 23 to 25 minutes for 6-inch skillets. Or bake until a wooden toothpick inserted comes out clean.

To prevent excess browning, loosely cover the cake with foil if it starts to become too dark.

Step 6: Decorate

Once the cake is baked, let it cool on a wire cooling rack. You want to let the peanut butter cake cool completely. Then you can drizzle your melted chocolate over the cake, a final touch.

At this point, you could also sprinkle mini chocolate chips on top as well.

Storage

The best way to eat this cake is while it is still warm. This is because everything tastes amazing, as the Nutella is still somewhat melted. Should you decide to keep your cake, the best way to do this is to put it in an airtight container. The cake should keep for a few days.
