Coconut Banana Cream Pie

Step 1

Start by baking your crust as per instructions on your package or recipe instructions for pie crust.

Then you want to add the sugar, salt, cornstarch, and milk to a medium saucepan, which you want to cook over medium heat and increase it until it’s thick and bubbly.

Then you can reduce the heat to low and cook for 2 minutes.

Step 2

Now you can stir some hot milk mixture into the lightly beaten eggs, then whisk and pour the mixture back into the pan.

Continue to stir while it’s boiling, then remove the pudding from the heat and stir in the butter, vanilla extract, and some coconut extract.

Now you can strain this and add in 2 cups of coconut, and now you can cover in plastic wrap and leave from 30 minutes to overnight depending on when you need the dessert for.

Step 3

Now you want to assemble all your pieces, so place a layer of pudding at the bottom and use sliced bananas, which you can dip in lemon juice and arrange a layer.

From here, you can add a layer of pudding, so now you can cover and chill for around 4 hours or until set.

If you haven’t already, you can make the whipped cream topping by beating it on high speed and adding your coconut extract and powdered sugar.

Step 4

Once you have a whipped cream topping that is of a consistency that you’re happy with, you can use it on your pudding, and you can leave this up to 4 hours to properly set.
